Hamburger Rice Casserole

This is a quick, easy meal to whip up when you are short on time.  Serve with any type of vegetable and a roll and you have a nutritious meal!

Hamburger Rice Casserole

  • 3 lbs Ground Chuck or Hamburger meat
  • 3 cups cooked Instant White or Brown Rice
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/2 cup chopped orange or red bell pepper
  • 1/2 cup chopped green pepper
  • Salt and pepper to taste
  • Alternative ingredients, any variation:
  • 1 quart canned Corn
  • 1 quart canned Carrots
  • 1 quart canned Green Beans
  • 1 head steamed Broccoli
  • 1 quart canned Sweet Peas
  • Crumbled prepared Stuffing
  • Ingredients for White Cream Sauce:
  • 1 sticks Vegan butter
  • 4 Tbsp Gluten free All Purpose Flour Blend
  • 5-6 cups Dairy free Milk


  1. In a large frying pan, cook your meat and drain well.

  2. Preheat oven to 350 degrees F.

  3. Cook rice in microwave or on stove, and set aside.

  4. Chop onion, celery, and bell pepper.  In medium size frying pan, saute chopped vegetables.

  5. Follow recipe for White Cream Sauce, adding sauteed vegetables once mixture has thickened.

  6. Place meat and rice into 6 quart baking dish and add sauce.  Mix well.

  7. Bake @ 350 degrees for 20-30 minutes, or until top of casserole begins to brown slightly.

  8. If you  choose to add additional vegetables, stuffing, or both, use a larger baking dish.  I have used a roaster pan and it works quite well.

  9. Allow to sit and settle for about 5-10 minutes after removing from oven before serving.










  19. If you have added additional vegetables into the casserole, serve with a roll or biscuit.  If not, serve with your choice of vegetable and a roll or biscuit.  Either way, your family will enjoy a meal that didn’t take forever to prepare :)
